Boba Soy Drink Pudding
Ingredients
The Base: 2 cups Superior Natural Unsweetened Soy Drink, 1 cup Warm water, 1 tbsp Vegan gelatin powder.
The Topping: 1 cup Boba, your choice of sweetener (Black sugar syrup or Honey).
Instructions:
Heat: Add the soy drink to a saucepan and heat until warm.
Dissolve: Combine warm water and vegan gelatin powder in a separate cup; whisk until fully dissolved.
Mix: Slowly add the gelatin mixture into the warm soy drink.
Set: Pour into a bowl and refrigerate for 2 hours.
Boba Time: Boil boba in water for 30 mins, then turn to low heat and stir for another 30 mins until perfectly chewy.
Plate: Remove the pudding from the bowl, top with boba and your sweetener. Serve chilled. Enjoy!
