"Spiderweb" Creamy Tofu & Carrot Soup
This vibrant orange soup, packed with the goodness of carrots and the creaminess of tofu, is the perfect warm treat for a chilly Halloween evening. The best part? We'll transform it into a spooky spiderweb with a clever drizzle of vegan sour cream or coconut cream! It's an easy way to make dinner magically festive.
Ingredients:
For the Soup:
1/2 package of Superior Natural Firm Tofu, pressed and crumbled
4-5 medium of carrots, peeled and roughly chopped
1 medium yellow onion, chopped
2 cloves garlic, minced
4 cups vegetable broth
1 tablespoon olive oil
1/2 teaspoon dried thyme
Salt & black pepper
For the "Spiderweb" Topping:
1/4 cup of vegan sour cream or full-fat canned coconut cream (if using coconut cream, use only the thick cream from the top of an undisturbed can)
Instructions:
Sauté Aromatics: In a large pot or Dutch oven, heat olive oil over medium heat. Add chopped onion and cook until softened, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
Add Carrots & Tofu: Stir in the chopped carrots and crumbled firm tofu. Add the dried thyme, salt, and pepper. Cook for 5 minutes, stirring occasionally.
Simmer the Soup: Pour in the vegetable broth. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the carrots are very tender.
Blend Until Creamy: Carefully transfer the soup to a blender (or use an immersion blender directly in the pot). Blend until perfectly smooth and creamy. If it's too thick, add a little more vegetable broth. Taste and adjust seasonings if needed.
Create the Spiderweb:
Warm the vegan sour cream or coconut cream slightly if it's too thick to drizzle. Transfer it to a small squeeze bottle or a plastic bag with a tiny corner snipped off.
Ladle the hot soup into individual serving bowls.
Starting from the center of each bowl, create a spiral with the cream, working your way outwards.
Take a toothpick or a skewer and drag it from the center of the spiral outwards to the edge of the bowl, repeating several times around the spiral to create the web effect. (Think of it like drawing spokes on a wheel!)
