Pan-Seared Tofu with Maple Pumpkin Puree

Ingredients:
Half package Superior Natural Organic Firm Tofu: cut into approximately 1.5 cm-thick squares
Mini Pumpkin (or regular pumpkin): 1/4, peeled, deseeded, and cubed
1-2 tablespoons maple syrup (adjust to your preferred sweetness)
Olive oil as needed
A pinch of salt
A pinch of black pepper
A pinch of cinnamon powder(optional)
A small amount of fresh thyme (or Rosemary), chopped (for garnish)
Instructions:
Prepare the Pumpkin Puree:
Place the cubed pumpkin in a steamer basket and steam until tender (about 10-15 minutes).
Remove the steamed pumpkin and either blend it in a food processor or mash it with a fork until smooth.
Stir in the maple syrup, a pinch of salt, black pepper, and cinnamon powder (if using) until well combined. If the puree is too thick, add a little warm water to adjust the consistency.
Pan-Sear the Tofu:
Gently press the tofu with paper towels to remove excess moisture. This helps it brown better and achieve a firmer texture when pan-seared.
Heat a suitable amount of olive oil in a non-stick pan over medium heat.
Place the tofu squares in the hot pan and sear each side until golden brown and crispy (about 3-4 minutes per side).
