Tofu Cornbread Stuffing

Ingredients:

4 cups cornbread, crumbled

1 package Superior Natural Firm Tofu, crumbled

1 large onion, chopped

2 celery stalks, chopped

1 cup mushrooms, sliced

3 cloves garlic, minced

2 tsp Italian seasoning

1 tsp dried sage

Salt & pepper to taste

2 cups vegetable broth

1/4 cup fresh parsley, chopped

2 tbsp olive oil

 

Instructions:

Preparation: Preheat your oven to 350°F (175°C).

In a large skillet, heat olive oil over medium heat. Add onions, celery, mushrooms, and garlic. Cook until vegetables are tender.

Stir in the crumbled tofu and cook for an additional 5 minutes, seasoning with poultry seasoning, sage, salt, and pepper.

In a large bowl, combine tofu mixture with crumbled cornbread.

Gradually pour vegetable broth over the mixture until it reaches your desired level of moistness.

Transfer the stuffing to a baking dish, covering it with aluminum foil.

Bake for 30 minutes, then uncover and bake for an additional 10 to 15 minutes until the top is crisp and golden.

Garnish with fresh parsley before serving.
