A Decadent Delight: Chocolate Pot de Crème with a Silken Tofu Twist

 

As we embrace the festive spirit of December, it’s time to indulge in desserts that warm our hearts and elevate our holiday celebrations. This year, we're adding a twist to the classic French dessert, Chocolate Pot de Crème, by infusing it with the smooth texture of silken tofu. This blend creates a lusciously creamy and healthier version of your favorite chocolate treat, perfect for holiday gatherings or a cozy night in. 

Ingredients: 

200g (about 7 oz) high-quality dark chocolate, finely chopped 

1/2 cup (120ml) heavy cream 

1/2 cup (120ml) whole milk 

1/3 cup (80g) silken tofu, blended until smooth 

3 large egg yolks 

5 tbsp granulated sugar 

1 tsp vanilla extract 

Pinch of salt 

Whipped cream and grated chocolate, for garnish

 

Instructions: 

Prepare the Chocolate Base: 

Place the chopped chocolate in a large bowl. Heat the heavy cream and milk in a saucepan until it simmers. Pour this hot mixture over the chocolate and let it sit for a minute before stirring until smooth. 

Blend in Tofu: 

Add the smoothly blended silken tofu to the chocolate mixture and stir until completely integrated. 

Create the Egg Mixture: 

Whisk together egg yolks, sugar, vanilla extract, and a pinch of salt. Gradually mix in the chocolate-tofu blend. 

Arrange Glass Cups: 

Set up small glass cups or dessert jars in a baking tray. 

Fill the Cups: 

Carefully pour the chocolate mixture into the glass cups, leaving a little space at the top for garnish.

Bake in a Water Bath: 

Fill the baking tray with hot water halfway up the sides of the glass cups. Bake at 300°F (150°C) for 30-35 minutes. The edges should be set, but the center slightly wobbly. 

Cool and Chill: 

Remove the cups from the water bath and allow them to cool. Then refrigerate for at least 2 hours. 

Garnish and Serve: 

Top each glass cup with whipped cream and a sprinkle of grated chocolate before serving. 

These individual Chocolate Pot de Crème cups, enhanced with the smoothness of silken tofu, make a perfect holiday treat. They're not just delightful to eat but also a feast for the eyes.
