The Ultimate Fall Comfort Food: How to Make an Easy, Plant-Powered Shepherd’s Pie

Ingredients

2 packs of Superior Natural Pressed Tofu

2 pounds of potatoes, peeled and quartered

1 stick of butter (Use plant-based/vegan butter to keep it 100% dairy-free!)

2 cups of chopped diced onion

1 cup of mixed vegetables (such as corn and carrots)

1.5 cups of vegetable broth

1 tablespoon Worcestershire sauce (Make sure to use a certified vegan Worcestershire sauce or substitute with soy sauce + a splash of balsamic vinegar)

1 teaspoon sea salt (plus more to taste)

1 teaspoon of ground black pepper

 

Instructions

Place the peeled and quartered potatoes in a large pot and cover with cold water. Add a teaspoon of sea salt, bring to a boil, and cook for about 25 minutes until tender.


Preheat your oven to 420°F (approx. 215°C). In a large sauté pan over medium heat, melt half a stick of butter (or plant-based butter) and add the chopped onions. Cook until tender and nicely browned (about 8 minutes). Add the rest of the mixed vegetables and cook together.


Add the pressed, diced Tofu directly to the pan with the onions and vegetables. Season with sea salt, black pepper, vegan Worcestershire sauce, and vegetable broth. Cook uncovered for 10 minutes until the tofu cubes absorb all the rich, savory flavors.


Remove the cooked potatoes and place them in a bowl with the remaining half-stick of butter (or plant-based butter). Mash thoroughly with a potato masher, taste, and adjust seasonings with salt and pepper.

Spread the cooked tofu filling evenly in a baking dish. Spread the fluffy mashed potatoes over the top of the ground tofu. Use a fork to create a decorative pattern on the surface of the potatoes. Bake at 420°F for 30–35 minutes until the top is golden brown and bubbly.
