Elevate Your Summer Treats: Delectable Silken Tofu Tiramisu

Tiramisu is an Italian classic that has won over dessert lovers worldwide with its delicate layers and rich flavors. This summer, we're bringing a twist to the traditional recipe by introducing silken tofu in place of the usual mascarpone, and soymilk in the sponge. This vegan-friendly, refreshing dessert is the perfect treat to enjoy in the balmy weather.


So, why tofu, you ask? Silken tofu, its silky texture, and protein content make it an excellent substitute for mascarpone cheese. This clever swap significantly reduces the calorie count while preserving the velvety richness that Tiramisu is so well-known for.

Ingredients:

For the sponge:

1 cup all-purpose flour

1/2 cup sugar

1/2 teaspoon baking soda

1/2 teaspoon salt

3/4 cup Superior Natural unsweetened soymilk

1/2 cup vegetable oil

2 teaspoons apple cider vinegar

1 teaspoon vanilla extract

For the filling:

1 cup Superior Natural organic silken tofu

1/2 cup sugar

1 teaspoon vanilla extract

1 tablespoon amaretto or rum (optional)

1 cup strong brewed coffee or espresso, cooled

For the dusting:

2 tablespoons unsweetened cocoa powder

Instructions:

1. Sponge Preparation:

Preheat your oven to 350°F (175°C). In a large bowl, combine the flour, sugar, baking soda, and salt. In a separate bowl, whisk together the soymilk, oil, vinegar, and vanilla. Add the wet ingredients to the dry, mixing just until there are no large lumps left. Pour the batter into a lightly oiled 8-inch square or round baking pan. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow the sponge to cool completely.

2. Filling Preparation:

In a blender, combine the silken tofu, sugar, vanilla, and amaretto (if using). Blend until smooth.

3. Assembly:

Cut the cooled sponge into fingers or small squares and dip each piece briefly into the coffee. Arrange a layer of the soaked sponge at the bottom of your serving dish. Spread half of the tofu cream over the sponge. Repeat with another layer of soaked sponge and tofu cream.

4. Finishing:

Dust the top layer with cocoa powder, cover, and refrigerate for at least 2 hours or overnight. This allows the flavors to meld together beautifully.
